Homemade Granola

I have been into granola lately. I found a recipe at Cooks Illustrated that I really liked but have made a few minor changes to make it just how I like it. I love it for breakfast but also on top of yogurt.


1/2 c. pecans broken into 1/4" to 1/2" pieces (or you can used coarsely chopped almonds)
1/2 c. coconut
1/2 c. sunflower seeds
1 c. sliced almonds
3 c. oats (I like a combination of both quick and regular oats)
1/3 c. canola oil
1/4 c. maple syrup (real stuff - not Mrs. Butterworths)
1/4 c. honey
cinnamon and/or nutmeg (optional)
craisins


Mix the dry ingredients in a large bowl. Whisk the oil, honey and maple syrup in a small sauce pan over medium heat until warmed. Pour over dry ingredients and stir until it is well coated. Sprinkle a little cinnamon or nutmeg over the wet granola and stir to mix. Spoon onto a sheet pan and layer evenly. Bake in a 325 degree oven for about 25 minutes (or until golden brown), stirring every 5-8 minutes. When cooled store in an airtight container. I like to just add my craisins to the bowl before I pour in my milk. Delicious.
