Baked Potato Soup

I cooked the Baked Potato soup on Our Best Bites and it was good, but I made a couple of changes. I added more cheese than it called for, and used a little bit of bacon drippings to brown a yellow onion instead of green onions. I did still use chives for the topping, but I liked the yellow onion--it gave great flavor. Also, my kids liked broccoli on top of their soup. And, I went to Costco and they sell a bag of six baguettes in the bakery for $4.49, and they made PERFECT little bread bowls for my kids. They L-O-V-E-D them! I am going to use them for everything. Also side note--I should have taken a picture, because they bread bowls actually look like baked potatoes, and with all the toppings on top, it looked like a giant baked potato--very cute.

  1. Nice...I made the soup tonight too, after your suggestion. I did the potatoes in the microwave, which worked well, and was faster. I also sauteed the onion and thought it was really good as well. I will have to look for the baguettes.
